Cabardès - Languedoc
Cabardès is an AOC region named after the Lords of Cabaret who defended the Châteaux de Lastours against Simon de Montfort in 1209. Despite the name's medieval origins, this appellation is on
e of the youngest in France, having only become official in February of 1999.
Most of the wine produced in the Cabardès is red but rosé can also be found and some are classified as AOC. The region is positioned on the cusp between the distinct climates of the the Languedoc-Roussillon in the southwest of France and the Montagne Noir to the north.
The appellation is one of the few AOCs that combines grape varieties typically found in Mediterranean climate like Syrah and Grenache with varieties typically found in Atlantic climate like Merlot and Cabernet Sauvignon.
