Domaine des Cretes
Eric Monin, is the winemaker responsible for the Languedoc, seeking out new producers who have hidden gems like this wine. The grapes are planeted on the arid, granite soils of a hillside, well exposed to the ripening sun and cooled by the local winds. The grapes are picked in the cool of the morning and sent the press and then straight back into the tank for cool fermentation. Two thirds is matured on fine lees in tank, whilst the remaining is part barrel aged for a few months, giving this wine a slight oaky flavouring.
